Healthier Cheesecake
This cheesecake is higher in protein, creamy and decadent, without as many calories as the traditional version- but you won't know the difference, truly!

Ingredients
2 cups - Seven Sundays chocolate sesame cereal
1/2 cup - old fashioned oats
2 Tbsp - salted butter
1 tiny pinch of salt
1/8 Tsp - cinnamon (Ceylon recommended)
1/4 Tsp - vanilla extract
1/4 cup - brown sugar

Preheat oven to 325 degrees Fahrenheit.
Fill a closed 9-inch springform pan with aluminum foil to prevent water seepage.
Use a food processor to blend oats until texture becomes course flour
Add cereal and continue to blend until fully crushed
Add butter, salt, cinnamon, vanilla, brown sugar and blend until combined and moistened.
Place springform pan on baking sheet and press cereal mixture onto the bottom of springform pan.
Bake for 10-12 minutes.
Remove crust from heat and allow to cool while preparing the filling.
Use a mixer to whip cream cheese, sugar, honey and salt on speed level 3 (low) for one minute.
Add lemon juice, zest, Greek yogurt and cottage cheese and blend another minute at speed level 3 (low).
Add 6 eggs, one at a time, saving the yolk for last. Do not over - mix.
Pour mixture into springform pan and place the entire pan into a larger roasting pan filled with halfway with hot water.
Bake for one hour at 325 until edges are set and center is only slightly jiggly. Turn off oven and let sit for 15 minutes.
Remove from oven and let sit for roughly 10 minutes before removing from the water to continue cooling at room temperature (1-2 hrs).
Wait until cheesecake is completely cooled to move it to the refrigerator to set for 4+ hours.
I recommend topping this cheesecake with blueberry sauce made by stirring frozen blueberries with 1 Tbsp olive oil, 1 Tbsp honey, 1 tsp vanilla extract, and enough water to achieve desired consistency over medium heat on the stovetop burner until the blueberries have melted and softened enough that you can mash them with the back of a spoon.

1 cup - fat free Greek yogurt
2 cups - 2% fat cottage cheese, blended
1 - 8 oz pack of low fat cream cheese
Zest of 1 lemon, and its juice
1 pinch of salt
6 eggs + 1 egg yolk
1/2 c - sugar
1/2 cup - honey
